Going to a breakfast tomorrow, so I mixed this up and I'll be baking it in the morning before I leave (original from Cooks.com). I split it between two pans and plan to serve it with some Pear Honey:

STUFFED FRENCH TOAST
16 slices bread, cubed
2 (8 oz.) pkgs. cream cheese, cubed
12 eggs
2 c. milk
1/3 c. real maple syrup
1 tsp. vanilla
Cinnamon

Put half of bread on bottom of 9 x 13 inch pan; sprinkle with cinnamon, then all of cream cheese. Then put the rest of bread on top; sprinkle with cinnamon. Mix eggs, milk, syrup, and vanilla together. Pour over bread; cover and let set overnight. Bake at 375 degrees for 45 minutes or so.
